Mixtures of helix - forming polysaccharides with surfactants structure formation, phase behaviour, and gelation

Project objective

Research objectives and content Compositional properties of helix-forming polysaccharides (mainly carrageenan, amylose, as well xanthan and gellan) with surfactants/lipids are proposed to be investigated. Identification of the mechanisms involved and their consequences on structure-stability and on microscopic-macroscopic properties will be examined. This analysis is covered by a range of physicochemical techniques including NMR, small angle X-ray scattering, light scattering, optical rotation, calorimetry, rheology, cryo-TEM microscopy, time-resolved ellipsometry and field flow fractionation studies. Training content (objective, benefit and expected impact) The applicant will have the possibility of developing and enlarge his expertise in the field of the fundamental colloid and biopolymer science, and gain knowledge in the active area of surfactants/lipids as well as on research techniques. Nevertheless, the importance of developing (new) materials based on renewable resources, such as polysaccharides, in all applications is also receiving widespread recognition. This project will attempt to introduce a deep enough understanding of the molecular factors that govern the behaviour of largely unexplored mixed biomaterials. Links with industry / industrial relevance (22) Polysaccharides and surfactants/ lipids find extensive practical applications in industry. The new lines of research proposed towards multicomponents systems will be of a great practical importance for the development of novel applications with improved and controlled properties.
