Цел на проекта

Research objectives and content Carbohydrate polymers, like cellulosics, starches, alginates, and various types of gums play a fundamental role in nature. Their industrial use includes such broad applications as rheological modifiers, thickeners, suspending and gelling agents. From structural point of view, the chains may assume several conformations, locally ordered, in solid state or in solutions and are capable of forming supramolecular structures. The knowledge of polysaccharide structure is therefore essential in understanding, controlling and optimizing their function in various medical and industrial applications. The project concerns studies on the structure and conformation Al dynamics of polysaccharides in solution employing nuclear magnetic resonance (NMR) spectroscopy. Variable-temperature 13 C relaxation measurements at different magnetic fields in combination with dynamic modelling provide quantitative information on the flexibility of carbohydrate chains as a function of the nature of the monomer unit and of the type of glycosidic linkages. Complementary dielectric and light scattering studies are foreseen in order to get a better understanding of chain dynamics in various time scales. The studies will be mainly focused on branched polysaccharides for which at the moment there is a lack of structural information and dynamical behaviour. Training content (objective, benefit and expected impact) Although the project aims at solving problems in fundamental research, the result will be also of interest with respect to applied research since the understanding of polysaccharide dynamics in solution and in the solid state will help in optimizing their properties in chemical, food and drug industries.
