Final Activity Report Summary - FOOD INFORMATICS (A New Integrated Systems Science)

The objectives of this project in terms of targeted and focussed secondments of experienced researchers from the University of Copenhagen to the industrial partners' laboratories were achieved, and two-way transfers of knowledge proceeded primarily through the advancement of the two major topics for chemometric applications during and beyond the periods of the visits. The two major areas of scientific focus in the project plan were followed together with contributions to other scientific themes and the development in parallel of algorithms and methodologies which have the potential to be applied widely to other industrial research systems. Detailed experimental design methodology knowledge was transferred from the University of Copenhagen experts to the industrial partner. These methodologies were implemented in the two major project themes, to produce materials for analysis from which high quality experimental data were obtained (NMR spectroscopy, LC-MS, GC-MS and sensory). These data were used in the development of novel pre-processing methods prior to multivariate statistical analyses for characterisation of variability within sample populations and for defining links to external variables. Technique developments included the creation and implementation of a new method for alignment of NMR data prior to PCA (and other chemometric) analyses. The latter methodology has been published in a major NMR journal and has been extended to other analytical data types.

Chemometric techniques (for mathematical and statistical handling, analysis, interpretation and prediction) can extract relevant information from diverse sources of data. The objectives of this proposal are to develop and apply novel chemometric methodologies to gain fundamental understanding of complex food systems through the combination of data from independent measurement techniques (e.g. biophysical and sensory) in a manner not currently available.Such understanding will facilitate analysis and molecular-level understanding of sensory and nutritional attributes of food systems. Initial focus will be on two targets: molecular level characterisation of sensory attributes in tea systems and detection of tomato variants that are naturally enriched in antioxidants and other beneficial nutrients. The mathematical models will be extended to attempt to combine complex multimodal sensory data with molecular-level analyses to determine the impact of wider societal influences, such as age, taster or cultural status.The transfer of knowledge will be achieved through the creation of a strategic trans-European partnership between world-leading chemometric experts in Denmark at the Royal Veterinary and Agricultural University (KVL) and the Food Industry Measurement Science expertise at Unilever Colworth in the UK. The chemometric experts will develop innovative mathematical approaches to probe interdisciplinary data sets obtained from state-of-the-art industrial spectroscopic (NMR, IR and Raman) instrumentation, commercial samples and sensory analyses, to gain novel and fundamental insights into complex food systems.This understanding will subsequently facilitate the development of higher quality, more nutritious food products and increased competitiveness in the global marketplace for a major European Company. The teaching and research potential of the academic partner will also be enhanced through applying the in-depth knowledge acquired of the Food Industry.
